Embarking on a Journey Toward Sensory and Creative Excellence

In the spring of 2025, we at Solbam were honored to be selected as a new member of the Dom Pérignon Society, the global chef community led by the renowned Champagne house Dom Pérignon. This distinction goes beyond a brand partnership; it symbolizes a deep resonance between our values and the house’s unwavering pursuit of creation and precision.
Founded in Italy over 20 years ago, the Dom Pérignon Society is a collective of 126 leading chefs and sommeliers from across the globe. These culinary visionaries explore and reinterpret each new vintage through their own creative lens, building a dynamic dialogue at the intersection of food and Champagne.
Vincent Chaperon, Dom Pérignon’s Chef de Cave, describes the Society as “a platform where wine and cuisine come together through a shared artistic journey that expands the senses.” At its core, the Society values the exchange of inspiration—where each vintage becomes a medium for emotion, memory, and interpretation.

A Shared Philosophy Between Dom Pérignon and Solbam
At Solbam, we have long been dedicated to presenting refined, sensory-driven cuisine rooted in seasonal Korean ingredients. Chef Taejun Eom expresses the flow of nature and locality through each dish, while Head Sommelier Dongyeon Ko and our sommelier team thoughtfully curate a global selection of wines and Champagnes that align with our philosophy and elevate the dining experience.
Among them, Dom Pérignon has long held a special place for us. The house’s approach to vintage—the use of grapes from a single year to capture the structure and energy of time—is deeply aligned with our own creative sensibilities. Each vintage embodies its own character, emotional contour, and tactile expression.
We find great inspiration in the way Dom Pérignon explores tactility, precision, and time. These values speak directly to how we craft our food and pair our wines—through subtlety, depth, and a deep respect for transformation.
Together with Korea’s Dom Pérignon Society Chefs
Dom Pérignon Society members are hand-selected from around the world, and as of 2025, four Korean culinary teams have joined this esteemed collective.
The first Korean member was Chef Sungjae Ahn of Mosu Seoul, who has worked closely with Dom Pérignon for many years. He was followed by Chef Jungsik Yim of Jungsik, and Chef Mingoo Kang of Mingles. This year, we at Solbam are proud to be the newest addition to this distinguished group.
Each of these chefs brings a unique perspective to the interpretation of Dom Pérignon vintages, reflecting the growing connection between Korea’s fine dining scene and the global culinary landscape. We are honored to contribute to this conversation by offering new experiences born from the meeting point of vintage, season, and sense.

Our First Encounter: 2025 Dom Pérignon Wine Event
In April, Dom Pérignon hosted its 2025 wine event at the Seosomun Shrine History Museum in Seoul—an architectural space that holds light, time, and silence in harmonious balance. The theme of the event was Tactile, a celebration of how Champagne engages the senses through touch, texture, and resonance.
We were privileged to take part in this immersive event, and our team experienced the Solo Tasting of Dom Pérignon Vintage 2015—a ritual designed to encounter a single glass of Champagne in complete sensory focus.
The Solo Tasting, conducted in silence and guided by music, allows for full engagement with the Champagne’s structure, bubbles, and evolution. For us, it was a deeply meaningful moment that helped define our future direction as a member of the Society—a moment of clarity, stillness, and creative intent.

As a member of the Dom Pérignon Society, we are excited to explore each vintage’s unique qualities and present them in harmony with Solbam’s culinary voice. The meeting of fine wine and cuisine is, for us, a form of storytelling—an exploration of emotion, seasonality, and craft.
Dom Pérignon’s vision of Creation ultimately invites us to consider how time and sense are translated into experience. At Solbam, we aim to contribute to this creative journey in our own way—through the language of Korean ingredients, emotional nuance, and seasonal awareness.
